Ingredients

  • 1 cup (225 g) unsalted butter, softened

  • ¾ cup (150 g) granulated sugar

  • 1 large egg, room temperature

  • 1 teaspoon vanilla extract

  • 1½ tablespoons instant coffee or espresso powder

  • 2 cups (250 g) all-purpose flour

  • ¼ teaspoon salt

Prepare the Dough

In a small bowl, dissolve the instant coffee in 1 tablespoon of warm water. Set aside. In a large bowl, beat butter and sugar until light and creamy. Add egg and vanilla extract; mix until combined. Stir in the dissolved coffee. Gradually add flour and salt, mixing until a soft dough forms.

Shape and Chill

Scoop or roll dough into small balls and place on a parchment-lined baking sheet. Gently flatten each cookie with a fork or the bottom of a glass. Chill the dough for 30 minutes for best shape and texture.

Preheat oven to 350°F (175°C). Bake cookies for 12–15 minutes, or until edges are lightly golden. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
