Ingredients

  • 300 g linguine or spaghetti

  • 400 g raw prawns, peeled and deveined

  • 3 tablespoons olive oil

  • 5 cloves garlic, finely minced

  • 1–1½ teaspoons red chilli flakes (adjust to taste)

  • 1 cup (240 ml) tomato passata or crushed tomatoes

  • 2 tablespoons tomato paste

  • ½ teaspoon paprika

  • Salt and black pepper, to taste

  • ¼ cup pasta cooking water (as needed)

  • 2 tablespoons fresh parsley or basil, chopped

  • Freshly grated Parmesan cheese (optional)

Instructions

Cook the Pasta

Bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Cook the Prawns

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season prawns lightly with salt and pepper. Sauté prawns for 1–2 minutes per side, until pink and just cooked. Remove from pan and set aside.

Make the Sauce

In the same skillet, add remaining olive oil. Add garlic and red chilli flakes; sauté for 30–40 seconds until fragrant. Stir in tomato paste, paprika, and tomato passata. Simmer for 5–7 minutes, seasoning with salt and pepper. Add a splash of pasta water to loosen the sauce if needed.

Combine and Serve

Add cooked pasta to the sauce and toss well. Return prawns to the skillet and gently mix. Cook for another 1–2 minutes until everything is well coated. Remove from heat and garnish with fresh herbs and Parmesan if desired.
