  • 1¾ cups (220 g) all-purpose flour

  • ½ cup (50 g) unsweetened cocoa powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ¾ cup (150 g) granulated sugar

  • ½ cup (100 g) brown sugar

  • ¾ cup (180 ml) vegetable oil or melted butter

  • 2 large eggs, room temperature

  • ¾ cup (180 ml) buttermilk

  • 1 teaspoon vanilla extract

  • ½ cup (120 ml) hot coffee or hot water

  • For the Baileys Cream Cheese Frosting

  • 8 oz (225 g) cream cheese, softened

  • ½ cup (115 g) unsalted butter, softened

  • 2½–3 cups (300–360 g) powdered sugar, sifted

  • 2–3 tablespoons Baileys Original Irish Cream

  • ½ teaspoon vanilla extract

Make the Chocolate Loaf Cake

Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In a separate large bowl, mix granulated sugar, brown sugar, and oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in buttermilk and vanilla extract. Gradually add dry ingredients, mixing until just combined. Slowly pour in hot coffee or water and mix until smooth. Pour batter into prepared pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted comes out with a few moist crumbs. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar until light and fluffy. Mix in Baileys and vanilla extract to taste.
